Paris Butter in Herne Bay is excited to announce their next collaboration

On 2 & 3 June 2026, they’ll welcome Chef Thav Phouthavong of 80/20 (1 Michelin Star, Asia’s 50 Best Restaurants) and Le Petit Léon’s Nick Honeyman (1 Michelin Star) for a special two-night dining experience alongside Paris Butter’s own Paris Butter Co Owner and Head Chef, Zennon Wijlens.

 

While the three chefs come from different corners of the culinary world, this collaboration has been a long time coming. Thav, Nick and Zennon first met at an event in Bangkok two years ago, instantly connecting over a shared approach to hospitality, creativity and ingredient-driven cuisine. Since then, the idea of cooking together has continued to grow, making these two nights feel especially meaningful.

 

Known for its innovative interpretation of Thai cuisine, 80/20 balances local ingredients with bold, modern technique. Under Chef Thav, the cuisine is often described as fun, bold and unpretentious, while remaining deeply grounded in local flavour. Alongside Nick’s refined European influence and Zennon’s creative New Zealand approach, the result promises to be something truly collaborative and unique.

 

Together, the three chefs will present a shared menu featuring:


• Two snacks from each chef
• Two courses from each chef

 

A collaborative experience of snacks and six courses, bringing together three distinct styles for one unforgettable evening.

 

$350 per person
Optional wine pairing: $245 per person.
